This is a great little video about refraining from judging and treating people right. I love what the homeless man says about there being more ways to do good than bad. Sometimes it's so easy to get caught up in our own lives and our own worries that we forget to stop and take opportunities to do good. I am so thankful for all the people in my life that show me kindness each day. What a lucky girl I am. I hope you all have a lovely day & don't forget to be kind!

This post is inspired by one of my favorite people on this planet, Marissa. She is one of my closest and dearest friends, even if the majority of our friendship has been a long-distance relationship! Marissa goes to U of O where she writes for Oregon's Her Campus page. {you can find everything Marissa writes here} And though I don't attend U of O, I like to read what she writes because she's great. I'm a snacker. My favorite part of coming home after a long day is my after-school snack. I don't buy junk food and candy very much because I know I don't have the willpower to choose healthy food over junk food if it's there. But it's hard to keep snacks from getting boring when they are healthy. So here are a few I've been liking lately:

Apple Sandwiches



This is just a fun way to do apples and peanut butter and sneak in some chocolate. This snack is definitely more calories than the others but it keeps you full for a long time and it's like a dessert. Just slice your apple transversely into discs (the thinner the better) and be sure to cut the core out.
apple: 74 calories - 2 Tbsp natural peanut butter: 210 calories - 1 Tbsp semi-sweet chocolate chips: 70 - grand total: 354

Cheese and Crackers


This is an oldie but goodie. Simply stick cheese slices on top of your crackers. 
4 whole grain crackers: 80 calories - 1 oz. colby& monterey jack cheese: 110 calories - grand total: 190 calories










Yogurt Dots



This is the easiest snack and it's so good. Spoon about a half cup of your favorite yogurt (mine is pictured above) into a sandwich bag and cut the tip off so you can squeeze little dots of yogurt onto a freezer-safe plate. Freeze for about an hour and enjoy!
1/2 cup honey flavored greek yogurt: about 110 calories

A few others I enjoy: raw almonds + craisons , celery + laughing cow cheese wedge , smoothies (I'll do a whole post about smoothies because I've got some good ones!) , whole wheat toast + natural peanut butter

I love watching The Oscars. And I may or may not love it solely for the Red Carpet 'pre-show' that comes with watching each year. There are always mixed reviews on certain dresses, whether they belong on the best dressed or worst dressed lists, but here are a few of my own personal favorites from last night...


This was Jennifer Lawrence's night - she stole the show - I mean best dressed in this to-die-for Dior Haure Couture gown and an Oscar for Best Actress. This girl is gorgeous and she handled that trip up the stage very gracefully in my opinion. Love her.


I loved Naomi Watts in this Armani Prive gown. Not everyone can pull off an entirely sequined dress and the top of this one is so fun and unique. 


Jennifer Garner spiced things up on this year's nude + metallic red carpet with this purple Gucci gown. The color and shape flattered her well; she was glowing. 


 

There have been mixed reviews about Amy Adam's Oscar de la Renta ball gown, but I think she looks stunning. I'm a huge fan of gray and I don't think this textured skirt overpowered her at all. She wore it well.


This red Valentino gown is perfection on Sally Field. I love the color, and the ruched bodice, and the long sleeve. A total winner.


Stacy Keibler definitely turned heads in this Naeem Khan dress. The beading and lines were very figure flattering. George looked great as well; and though I thought it was a bit aging, fiancé l-o-v-e-d his beard.

 
  For the second time Octavia Spencer showed up in Tadashi Shoji, and for the second time she was a red-carpet favorite. The soft, flowy gown looks so great and the color is perfect.

Conner and I didn't pick wedding colors for almost a month, it was really hard to decide on a palette that matched the feel we were going for, that could easily translate into the bridal party's attire, and that we both loved. We finally settled on one that we are both excited for (you'll have to wait until June to see it!), but here are a few of the different color sets we considered.

When picking colors there are just a few things (in my humble opinion) to take into consideration.

  1. What season are you getting married in? I would have looked at entirely different hues if Conner and I were planning a winter wedding. 
  2. What is the feel of your wedding? If you're going for a sleek modern affair then black, white, and deep purple are fabulous. While a country-chic wedding calls for some blues, creams, and yellows. Keep in mind that your colors are what tie in the whole look of your wedding.
  3. Would you want your bridal party wearing the colors you've picked? Will those colors look good on everyone? No matter what body type or skin tone you have, anybody can pull off a little black dress; however, the same cannot be said for every color.
  4. Do you love them? Your colors should be a reflection of your personality. You want to look back on pictures and love the way your wedding looked, so don't just pick colors that are trending. Choose colors you'll love just as much when you look back.

Other tips that helped us:

~ Use the color wheel. While it is becoming popular to mix what were previously thought of as clashing colors, complementary colors make for a more timeless feel. Remember, complementary colors are those opposite each other on the color wheel.
~ Go to your local home improvement store and pick up some paint chips. This will give you a better idea of what your colors will look like together. It will also help your venders get a better idea of what you want in your flowers or linens. And if your bridesmaids aren't all wearing the same dress, send them a sample of the exact color you want.

One hundred days. In just 100 more days we become Mr. & Mrs. and I cannot believe it's so close. I am so excited to be marrying my best friend! He is the funniest and kindest person I know, not to mention the best looking guy on the planet. I am the luckiest girl in the world :)

When I was in high school I read a book called Gifted Hands, which told the story of Ben Carson, a neurosurgeon and the Director of Pediatric Neurosurgery at Johns Hopkins Hospital. He grew up with a single mother who pushed him to be all that he could, and he became the first surgeon to successfully separate craniopagus (conjoined) twins that had been connected at the head. His story is an amazing one and this is a must read book.


Last year in February Ben Carson came to BYU to speak in a forum as part of BYU's observance of Black History Month. I was excited to go hear him speak after learning of his amazing story in high school.

His lecture was incredible, he is such a wise and humble man. One thing he shared really stuck with me. He shared with us his acronym THINK BIG that would help us to be successful in life.



       T : talent - everyone has a talent, we must recognize ours, this includes intellectual talent
       H : honesty - we must be honest and have integrity in all that we do, no matter what
       I : intellect - we should follow the people that came before us and learn from their mistakes
       N : nice - be a gentleman/lady, we will get farther in life if we are genuinely nice to people
       K : knowledge - "develop your God-given talents to help those around you"

       B : books - we must exercise our brain and continue to learn our entire life
       I : in-depth learning - we shouldn't superficially cram but spend time with learning
       G : God - we must make Him the center of our life

Confession: I love to bake and I'll admit, I'm pretty good at it. Cooking, on the other hand (especially with meat) is a struggle. Good thing fiancé is a natural-born chef. One of our favorite dinners is chicken fajitas, and this boy makes the greatest. He doesn't need a recipe, he always whips up his own...



Thinly slice 1 1/2 to 2 bell peppers and the onion.










Sauté the peppers and onion in about 2 Tbls. butter. Salt and pepper to taste. You want the onions to become slightly translucent with the edges lightly browned. The key is to keep the veggies from becoming totally soft and limp - they're better with a little bit of crunch left in them.


While the veggies are on the stove slice two chicken breasts transversely to make four thinner pieces (as shown above), then cut into thin strips. The thinner the better in our book.
At this point your veggies might be done. If so, remove them from the pan and onto a plate for serving. 
{ Set the pan aside, you'll use it again to cook the chicken. }



Put the cut pieces of chicken into a bowl. Now for the fun part - add to the chicken: a couple squirts of lime juice, and a few good shakes of all the other spices. Like I said before, Conner doesn't use recipes when he cooks so we just eyeball it. And really, the spices are all to your own taste; the more you add, the spicier your fajitas will be.



Cook the chicken in the same pan you used for the veggies, around medium-high until it's cooked through. Then turn the heat up (almost to high) and cook until all the juices have soaked in and/or evaporated.

Once your chicken is done you're ready to eat! Enjoy!

Chicken Fajitas ~ Conner Style
servings: two
  • Tortillas (we like the uncooked kind you fry yourself)
  • 2 boneless, skinless chicken breasts
  • 2 bell peppers (any color)
  • 1 large onion or 2 small onions
  • Butter
  • Salt and pepper
  • Lime juice
  • Paprika (we like the Hungarian)
  • Ancho chile pepper
  • Mexican-style chili powder
  • Chile powder
  • Ground cumin

I love that quote, happiness really does depend on our attitude. So, happy President's Day, may it be a lovely one. I'm looking forward to a relaxing break from school filled with wonderful things like a dress fitting, invitation designing, and food tasting.

I like to dress for holidays - even the little ones. I feel like President's Day is the perfect day to be patriotic. The question is: red, white, or blue?

I love a good facial scrub, it does a world a difference for my skin when I exfoliate. There are so many good DIY scrubs out there but this is one I came up with last year. Mix it up and use 2-3 times per week.

Simple Honey Scrub
~ 3 tablespoons olive oil
~ 2 tablespoons honey
~ 1/2 cup sugar 

This is why I love this scrub:
  1. Not only is olive oil good in your food, it does miracles for your skin. It's been used in soaps for centuries. Olive oil contains lots of antioxidants, vitamins (specifically A and D), and natural moisturizers that help regulate sebum or oil production. read more here
  2. Honey is like liquid gold. Like olive oil, it's a great natural moisturizer full of vitamins (A and B). Honey also contains antimicrobial properties that fight against bacteria. read more here, and here
  3. The sugar's main purpose of course is for exfoliation, I like using sugar because it's gentler than salt, which is used in many homemade scrubs. I usually use white cane sugar in this scrub but brown sugar works well too.

I decided to start a collection of posts to document my experience being engaged and planning a wedding. First up, dress shopping! I don't think I'm alone when I say that I love to watch TLC's Say Yes to the Dress; it's so fun to see all the beautiful dresses and to see how happy all the brides are when they find the dress of their dreams. I was no less excited when the time came to go find my own dream dress.

In an episode of Say Yes to the Dress: Randy Knows Best (season 2, episode 2) Randy shared his top ten things to know before buying a dress. His tips are:

know your budget - it's ok to love the first dress - know your silhouette - be open to alterations - be open to different styles - keep location in mind - say yes and stop shopping - trust your instincts - leave room in the budget for extras - share your vision


I loved everything he suggested but a few of his tips really helped my dress shopping experience.


Know your budget. It's important to decide on a budget before you go, and to make sure you stick with it. It's not worth the heartbreak of trying on an over-budget dress, falling in love with it, and not being able to buy it. Make sure that you take alterations into account when you're trying on dresses. You could be spending about $500 on alterations, which would put you over if your trying on a dress that costs as much as your whole budget.




It's ok to love your first dress. I was one of those people who had to go to four different stores and try on 30 dresses. I ended up buying the very first dress I tried on at Danielle's Bridal. I loved every dress I tried on at that store, but I was worried that if I just bought the first dress I tried I would miss out on another one. In the end, the first dress was the one I couldn't stop thinking about.
Danielle's is amazing - they have every style, amazing quality, and prices that you cannot beat. I loved my experience there and highly recommend it. (This is not sponsored, these are my own opinions.)



Be open to different styles. We've all heard how certain body types belong in certain silhouettes, and going shopping I had very strong opinions on the dresses I thought would look good on me. But the bridal stylists at the dress shops have a lot of experience and work with wedding dresses every day - they really have a knack at picking up on brides' body types and personal tastes. I ended up loving a lot of dresses I thought I would hate because I was willing to try different options they pulled.




Trust your instincts. It doesn't matter who you take shopping, you're going to get a lot of different opinions. Luckily, my mom and sisters all loved my favorite dresses but it didn't make choosing one any easier. Finally, after a few days of not being able to get my dress off my mind I realized it was the one. Even though every person I shopped with was leaning toward a different dresses I went with my gut and I'm so happy I did. No one is upset if you don't pick their favorite, they are happy for you when you choose the dress you love.

Say yes and stop shopping. When I went in for my first fitting I saw a girl trying on my second favorite dress. Not gonna lie, I was a bit jealous. It was a gorgeous dress and for a second I wondered if I had made a mistake; but as soon as I put on my dress I had that great feeling again and I knew I had made the right choice. Finding a dress is like finding a husband - once you pick the one, you stop looking. All you'll do by shopping after you've bought a dress is confuse yourself. Remember the feeling you had when decided on the one.
